We've weathered through some new recipes and ingredients for the past few weeks so don't freak out now. Making yogurt is a snap and the only way you can make sure it's lactose, casein, dairy, soy, gluten, and any other allergen free!
Plus, this recipe is for your crockpot. No loading jars into a large pot, or buying special equipment. You need a crockpot and a beach towel. That's it. But bacteria is gross! If you like store bought yogurt then you are already eating bacteria--the good kind. Considering how poorly the FDA is taking care of our food supply(the peanut scare) I think I'll take care of my family's bacteria consumption.
Buying soy or rice yogurt is expensive. Just buying cow's milk yogurt is expensive. This is an easy way to save money. You spend $4 on your favorite 1/2 gallon of almond milk, you get 1/2 gallon of yogurt, instead of well, you can't buy almond milk yogurt. You get the picture. So off to the store with you to buy your favorite milk product and home to create yogurt!
I have completely stolen this idea off of the 365 Crockpot Blog--I love her and have included a link to her website! But I have a couple tips that can make this yogurt fit your allergic child's needs.
Online source for Dairy and Soy Free Yogurt Starter
Allergen Friendly Yogurt Recipe
8 cups or 1/2 gallon of milk(cow, goat, soy, rice, almond or coconut!!)
1/2 cup plain yogurt OR 1/4 tsp probiotic
Use at least a 4qt crockpot.
Pour 1/2 gallon of milk into your crockpot and cook on low for 2 1/2 hours.
Turn off crockpot and let sit for 3 hours.
Take out 2 cups of the milk and stir in the yogurt or probiotics.
Return to crockpot and cover with heavy towel.
Let sit overnight!
Wake up in morning and have fresh, healthy, cheap, allergen-free, yummy yogurt! Puree in some frozen fruit or a large drizzle of maple syrup to sweeten it up. If you want it to be thicker whisk in 1/4 cup tapioca starch--it's what the pro's do!

I got this same recipe. I tried a recipe from my nourishing traditions cook book and the first time it worked, but then the next 2 times it flopped but a blog friend told me about this crockpot lady and her yogurt recipe, bingo! We love to blend it with strawberries and xylitol or a touch of raw honey.

thanks for this idea...as I have been researching yogurt makers tonight in an attempt to save some money! I eat the coconut yogurt and my Mara eats rice yogurt...both are so expensive. I can't wait to try this :)

hi there.. i made this las tnight with rice milk and a probiotic and it came out like water.i have tapioca starch to made but i wanted to now is this normal for the rice yogart to be this way.. what should i do ? thanks rebecka

I tried the almond milk yogurt yesterday/last night and it is still just almond milk this morning. I used probiotics, and tapioca starch to try to thicken. Any idea what I could have done wrong?

I've only tried the coconut milk as an alternative. I will get on the rice and almond milk though and see what I can figure out. Sorry for the frustration! Since L doesn't eat rice anymore I haven't messed with it. Two things that may have impacted it though was the size of crockpot and how well you insulated it. Also whether or not you used sweetened rice and almond milk. Since the probiotics are eating lactose(milk sugar) in dairy yogurt they probably need some sort of sugar to eat as they turn the non-dairy milk into yogurt. Try adding some sugar and remember that this product will be pourable not very thick even with the added tapioca. Does it have that soury yogurt taste?
i used i think a 6 quart crock and wrapped it in a army issued wool blanket.. i used vanilla rice milk shaws store name brand..let me know what i can do and what you figure out.. wwhat starter do you recommand..thanks rebecka
Did some more research. All the store bought alternative milk yogurts contains a lot of different thickening agents. Pectin, guar gum, some words I can't pronounce much less spell. So I would judge your yogurt success less by thickness and more by flavor. If it tastes like yogurt then you did it! Papaya has a lot of pectin in it--that's what gives your smoothie that thickness. Throw a couple chunks into your blender with your yogurt and give it a whirl.
As for starters. The simplest way is to use a cup of store bought yogurt or you can buy the dairy and soy free probiotics mentioned in the post above.
This weekend I will brave a batch of almond milk yogurt and report back!

Have you ever tried this with the So Delicious Coconut Milk (comes in 64 oz containers, intended for drinking as a milk sub, unlike the canned coconut milk) and So Delicious coconut milk yogurt (as the starter)? Would it work to open up any probiotic capsules (I use Jarrowdophilus) as the starter?
I would like to make a soya yogurt (as I am intolerant to dairy products) the crock pot way - do you use a soya yogurt for the starter or can it be any starter - goats/sheeps etc (except dairy of course)?
To make soy yogurt, just use soy milk and soy yogurt for your starter!
Tried almond milk last night and failed. Any ideas?
If thickening with tapioca starch, when do you add it? Do you add it to the milk when you heat it or when you add the starter or the next morning when you have the yogurt? Could you use gelatin or other starches like potato or corn starch? I am making some coconut yogurt as we speak. I am using so delicious unsweetened coconut milk alternative as the milk and so delicious kefir as the starter. I do want a thicker, not sweet yogurt. I am planning to use it as a sour cream substitute. I so miss sour cream since going dairy and soy free 5 years ago.
I tried it with so delicious coconut milk yesterday. It came out watery. I tried gelatin, which just clumped. I added some starch, didn't thicken. I tied the tub of it in cheesecloth and hung it upside down over the sink for 10 minutes. It let all the watery-like substance out of it and thickened it considerably. I was left with 1/2 the amount, but thicker. This is how my russian in-laws make farm cheese.
I also tried it with almond milk TWICE and failed. I tried it with soy milk and it came out just fine. I tried once with So Delicious coconut milk and also failed. I am trying it again tonight with the coconut milk and will insulate it well and add a source of glucose, probiotics and prebiotics and see what happens.
Can you tell me which crockpot you use. Some say that their crockpot gets too hot and won't set up. Thanks!
