Making Good--Millet Hamburger Buns


Thanks to Laura, another dedicated mom, I was inspired to figure out hamburger buns.  And thanks to an allergy mom blogger and a tiny modification I managed to make glorious hamburger buns!  The recipe can also be turned into rolls, hotdogs buns, mini-bread loafs, etc.

These were so easy and turned out so well that I will be substituting them into the rotation diet in place of the multitudes of crackers my poor children have been bravely consuming.  I did substitute applesauce for the eggs with fantastic success.  I actually made a batch with the eggs and then with the applesauce and my taste-testers couldn't tell the difference!  So far I have made this recipe with millet and oatmeal with smashing success.  I'll keep you posted on the other grains and how they turn out.

Millet Hamburger Buns
1 cup water
2 T oil of choice(I used extra virgin olive oil)
1/2 cup applesauce or 3 eggs
2 tsp apple cider vinegar
1 3/4 cups millet
1 cup tapioca starch
2 1/2 tsp xantham gum
1 1/4 tsp salt
2 T sugar
2 tsp yeast

I used the dough cycle on my bread machine but you can use a stand mixer with the dough hook to make this dough.  It will be very wet--more like a muffin/cake batter than bread dough so don't try to do this by hand.  It won't work.  
Once your dough is made, preheat your oven to 350.  I made hamburger bun molds out of circles of aluminum foil but you can use english muffin molds or I found a hamburger bun pan and hotdog pans online.
Using a spoon drop several teaspoonfuls of the dough into each mold placed on a greased baking sheet.  Bake for about 10-12 minutes or until golden brown.  Let cool slightly before slicing.  I've also baked these in a mini loaf pan and they turned out great!
